The formal name of chitosan is Β-1 ,4-poly-D-glucosamine and the molecular formula is C6H11NO4n.
Physical property: appearance is white or grey, amorphism, translucence, piece or powder solid with pearlescent colors, which doesn’t dissolve in water and alkali liquid and can dissolve in inorganic acid such as hydrochloric acid and nitric acid and most of organic acid. The main chain of chitosan will hydrolyze slowly in acid. The molecular structure of chitosan has three crystal types such as α, β and γ.
